A very easy mexican recipe of corn dough cakes made of corn masa harina filling. Additionally the filling has baking powder, salt and olive oil.

In a bowl add masa harina, baking powder and salt
Mix and add some water
Add 1 ½ tbsp olive oil
Mix gradually until a soft dough form
Cover and rest for 10mins
With wet hands roll 6 masa balls
Gently pat the balls to form gorditas
Cover and rest the gorditas
Heat a skillet with oil
Fry the gorditas each side
Set paper towel to drain the excess fat
Use a knife to cut into half and add the filling
