Gongura Pickle Recipe

A telangana recipe of pickle made of gongura Traditional andhra style gongura pickle or gongura pachadi made with gongura leaves with an aromatic tempering.This particular gongura pachadi is famous in the Andhra region but if one travels across South India there are many vegetable chutneys are available on the veg platter which can be eaten or served with just plain rice and ghee.

Ingredients for Gongura Pickle Recipe

  • 5 Gongura branches
  • 50 gram Dry red chilies
  • 10 gram Soaked Tamarind
  • 1 pinch Heeng
  • 2 tablespoon Coriander seeds
  • 1 teaspoon Cumin
  • 1/4 teaspoon Fenugreek
  • 10 Garlic Cloves
  • 1 tablespoon Popu
  • 4 tablespoon Oil
  • As required Curry leaves
  • As required Salt

Directions: Gongura Pickle Recipe

  • STEP 1.Dry roast coriander seeds and cumin seeds,set aside

step 2

  • STEP 2.Heat oil in the pan, add dry red chilies,set aside

step 3

  • STEP 3.Fry the gongura and set aside

step 4

  • STEP 4.Grind fried dry red chilies,add salt

step 5

  • STEP 5.Add garlic cloves and fried coriander and cumin seeds in the paste to grind

step 6

  • STEP 6.Add the fried gongura and soaked tamarind along with water in the paste to grind together

step 7

  • STEP 7.Heat oil in a pan

step 8

  • STEP 8.Add dried red chilies and popu,let them pop

step 9

  • STEP 9.Add garlic cloves and heeng

step 10

  • STEP 10.Add curry leaves and the prepared paste

step 11

  • STEP 11.Add salt to taste and mix well to fry

step 12

  • STEP 12.Serve as pickle
