Cooking Directions

  • STEP 1.In a large pot, combine the goat meat, onion, garlic, bay leaves, and water. Bring to a boil, then reduce heat and simmer for 2-3 hours, until the meat is tender.
  • STEP 2.While the meat is simmering, prepare the consome base. In a blender, combine the dried chilies, tomatoes, onion, garlic, cloves, cumin, oregano, and salt. Blend until smooth.
  • STEP 3.Strain the consome base into a separate pot, discarding any solids. Bring the consome base to a simmer and cook for 30 minutes to allow the flavors to meld together.
  • STEP 4.Once the meat is tender, remove it from the pot and shred it using two forks. Return the shredded meat to the pot with the consome base and simmer for an additional 10-15 minutes.
