Cooking Directions

  • STEP 1.Boil the eggs and remove the shells.
  • STEP 2.In a pan, heat oil and add mustard seeds, curry leaves, and chopped onions. Saute until the onions turn golden brown.
  • STEP 3.Add ginger-garlic paste, turmeric powder, red chili powder, and coriander powder. Cook for a minute.
  • STEP 4.Add coconut milk, tamarind pulp, and salt. Mix well and simmer for 5 minutes.
  • STEP 5.Add the boiled eggs and cook for another 2-3 minutes.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with rice or bread.

Cooking Tips

  • You can adjust the spice level according to your preference by adding more or less red chili powder.
  • For a creamier texture, you can add a tablespoon of cashew paste to the gravy.
