Chicken Cafreal is a delicious Goan dish. The chicken curry is prepared using whole chicken legs and has flavours of the Portuguese cuisine infused in it. This is because the dish traces its origins from the African colonies of the Portguese. Since Goa was under the Portuguese rule for quite some time, the chicken cafreal travelled here too just like the vindaloo. This is made by braising the chicken with a special masala paste, which is prepared by combining various spices such as cinnamon, peppercorns, cumin, cloves and cardamom. Served with a side of lemon wedges or potatoes, the chicken cafreal is a spicy chicken dish which is now a part of the local cuisine of Goa just like their fish and prawn curries. It is a dish that you can enjoy as a weekend lunch or for a family get together.

Ingredients for Goan Chicken Cafreal Recipe

  • 1.50 kilogram Chicken with bone
  • 12-15 Garlic Cloves
  • 3-4 inch Ginger
  • 3-4 inch Onion
  • 5-6 No.s Green chillies
  • 1-2 piece Cinnamon
  • 1 tablespoon Peppercorns
  • 1 teaspoon Cumin
  • 4-5 Cloves
  • 2 Cardamom
  • bunch One whole coriander leaves
  • 4-5 tablespoon Refined oil

Steps To Prepare

  • STEP 1.Source fresh and clean chicken legs for the dish.
  • STEP 2.Roughly chop all the ingredients required for the marinade.

Cooking Directions

  • STEP 1.Marinate the chicken with salt and lime juice. Now grind some garlic, ginger, onion, green chillies, cinnamon, peppercorns, cumin, cloves, cardamom and coriander leaves. Add a little bit of water and make a paste.
  • STEP 2.Now add the masala into the chicken and mix it well. Make small cuts and mix the masala smoothly on every portion.
  • STEP 3.Now keep the marinated chicken in the fridge for 24 hours if possible, so that the flavours infuse properly. In case you need to make it quickly, keep it for an hour or two.
  • STEP 4.Heat some oil in a pan, put the chicken onto it and sear it on low flame for 5 mins.
  • STEP 5.Put the chicken in the baking tin, add all the marinade into it and also add 1/4th cup of water into the tin to give moisture and tenderness to the chicken.
  • STEP 6.Water will ensure that the chicken is tender. Now bake the chicken for 45 mins at 100°c temperature.
  • STEP 7.Check once by putting a sharp knife into the chicken to see if it is cooked properly.
  • STEP 8.Once it attains a light golden colour, take it out and serve it.

Storage And Serving Method

  • STEP 1.To serve chicken cafreal, pair it with potato and lemon wedges.
