Roughly chop all the ingredients required for the marinade.
Cooking Directions
Marinate the chicken with salt and lime juice. Now grind some garlic, ginger, onion, green chillies, cinnamon, peppercorns, cumin, cloves, cardamom and coriander leaves. Add a little bit of water and make a paste.
Now add the masala into the chicken and mix it well. Make small cuts and mix the masala smoothly on every portion.
Now keep the marinated chicken in the fridge for 24 hours if possible, so that the flavours infuse properly. In case you need to make it quickly, keep it for an hour or two.
Heat some oil in a pan, put the chicken onto it and sear it on low flame for 5 mins.
Put the chicken in the baking tin, add all the marinade into it and also add 1/4th cup of water into the tin to give moisture and tenderness to the chicken.
Water will ensure that the chicken is tender. Now bake the chicken for 45 mins at 100°c temperature.
Check once by putting a sharp knife into the chicken to see if it is cooked properly.
Once it attains a light golden colour, take it out and serve it.
