Light, refreshing and the epitome of healthy Spanish food! Gazpacho or Gaspacho, also called Andalusian gazpacho, is a cold soup made of raw, blended vegetables. It originated in the southern regions of the Iberian peninsula and spread into other areas. Gazpacho is widely eaten in Spain and Portugal, particularly during hot summers, as it is refreshing and cool.

Ingredients for Gazpacho Recipe

  • 3 medium sized tomatoes
  • 300 gram Cherry Tomatoes
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 cucumber
  • 1/2 red onion
  • 1-2 garlic cloves
  • 2 bread slices
  • 10 basil leaves or coriander
  • 2 tablespoon Vinegar
  • 1/4 cup extra virgin olive oil
  • As required Salt
  • As required Pepper
  • As required Cumin
  • 1 cup cold water

Directions: Gazpacho Recipe

step 1

  • STEP 1.Roughly chop all the vegetables.

  • STEP 2.Place all the vegetables in a food processor or a blender, if there is not enough space, blend 1/2 of the vegetables and then add the rest.

step 3

  • STEP 3.Add the bread, vinegar, olive oil, water and seasoning.

step 4

  • STEP 4.Blend until smooth.

step 5

  • STEP 5.Check the seasoning and add salt if needed.

step 6

  • STEP 6.If you want very smooth texture strain through a sieve, if not serve the soup as is.

step 7

  • STEP 7.Serve cold, garnish with bread croutons, green onion, basil, cucumber and drizzle extra virgin olive oil.
