Cooking Directions

  • STEP 1.To make the gatta dumplings, mix gram flour, yogurt, spices, and oil to form a dough. Shape the dough into small cylindrical dumplings and steam them until cooked.
  • STEP 2.In a separate pan, heat oil and add cumin seeds, cloves, cinnamon, and bay leaves. Add chopped onions and sauté until golden brown.
  • STEP 3.Add ginger-garlic paste, green chilies, and spices like turmeric, red chili powder, and garam masala. Cook for a minute.
  • STEP 4.Add soaked rice and sauté for a few minutes. Add water, salt, and the steamed gatta dumplings. Cover and cook until the rice is cooked and fluffy.
  • STEP 5.For the mint raita, blend yogurt, mint leaves, green chilies, cumin powder, and salt until smooth. Serve the gatta pulao hot with mint raita on the side.
