Ingredients for Garlic Shrimp With Vermicelli Noodles Recipe

  • 150 gram Vermicelli rice noodles
  • 400 gram Shrimp shelled and deveined
  • As required Scallions chopped for garnish
  • As required Coriander leaves chopped for garnish
  • As required Ingredients for garlic sauce
  • 1/4 cup vegetable oil
  • 1/2 cup minced garlic
  • 1/4 cup chopped red chillies
  • 1/4 cup coriander stems finely chopped
  • 2 tablespoon chinese cooking wine
  • 2 tablespoon Soy Sauce
  • 2 teaspoon Sugar
  • 1 teaspoon black vinegar
  • As required Salt

Directions: Garlic Shrimp With Vermicelli Noodles Recipe

step 1

  • STEP 1.1 in a saucepan add 4 tbsp vegetable oil, ½ cup minced garlic, ¼ cup chopped red chillies and ¼ cup coriander stems finely chopped . Fry on low heat for 5 minutes. The oil will turn golden red because of the chillies. Turn off the heat and transfer all of it to a mixing bowl.

  • STEP 2.2 to this add 2 tbsp chinese cooking wine, 2 tbsp soy sauce,2 tsp sugar, 1 tsp black vinegar and salt to taste. Mix well set aside.

  • STEP 3.3 for the noodles, add 150 gms of vermicelli rice noodles in boiling water and cook. Remove from the water and strain them.

  • STEP 4.4 arrange the noodles by spreading them out on a wide circular platter with a little mound of noodles in the middle.

  • STEP 5.5 for the shrimp, wash 400 gms fresh shrimp and remove the shell. Leave the head and the tail on for presentation.

  • STEP 6.6 slit down the centre of the back and devein the shrimp. Open the shrimp wide so it can be placed flat and open to spoon the sauce into it.

  • STEP 7.7 arrange all the shrimp on the bed of noodles on the circular platter.

  • STEP 8.8 once all the shrimp are arranged, spoon the prepared sauce over the shrimp and also over the noodles so the noodles are able to pick up the flavourful sauce.

step 9

  • STEP 9.9 prepare the steamer in a wok, fill water and bring it to a boil. Place the platter in the steamer stand and cover it. Steam on high heat for 3 to 5 minutes depending on the size of the shrimp.

step 10

  • STEP 10.10 after turning off the heat do not uncover the dish. Leave it for 2 to 3 minutes.

step 11

  • STEP 11.11 lastly garnish with chopped scallion and coriander.

  • STEP 12.12 garlic shrimp with vermicelli noodles are ready
