STEP 1.Homemade special chicken masala :-1tablespoon coriander seeds, 1 teaspoon cumin seeds, 1 inch cinnamon, 2 Cardamom, 6 cloves,1 star anise,2 strands mace, little nutmeg (dry roast all ingredients and grind) make a fine powder.
STEP 2.Masala paste:-in a grinder add onion, half inch ginger, garlic, green chilli, black pepper corn and make a fine paste.
STEP 3.Marinate chicken :-In a mixing bowl add chicken, half teaspoon kaffir lime juice,pinch of turmeric, 1 teaspoon curd. Mix all ingredients nicely and rest it for 10 minutes.
STEP 4.In a pressure cooker add refined oil and half teaspoon ghee, add chicken pieces and fry for 3 to 4 minutes on medium heat.
STEP 5.Add masala paste and mix all ingredients nicely and cook until oil separate from masala.
STEP 6.Now add special chicken masala powder, mix and cook for few seconds
STEP 7.After add curd and half teaspoon jaggery. Mix nicely and cook for 5 minutes on high heat.
STEP 8.Add 1 and half glass warm water, salt. Mix and pressure cook(2 whistles)
STEP 9.After pressure cook leave as much gravy as needed and let the rest dry.
STEP 10.Turn off flame, add lime pieces (4 pieces), juice(half teaspoon), zest(half teaspoon) and leaves. Cover the pressure cooker with lid and leave it for 5 minutes.
STEP 11.Gandharaj chicken Garnish with sliced lime.Serve hot with steamed rice.
