A sweet made in Bihar and Orissa of deep fried sweetened dough flavoured with cardamom (elaichi). Also popular in Bengal as mishti, it is made of ghee and flour deep frid and then soaked in sugar syrup. Goja is a cousin of khaja as both are made of almost same ingredients.   • 1 cup Water
  • 1 cup Maida
  • 2-3 Cardamoms
  • 1/4 cup Hot oil for dough
  • As required Cardamom powder for taste

How to Make Gaja/goja Sweet Dish Recipe

STEP 01

In a pan add 1 cup water and half cup sugar. Then let the sugar water boil till it turns to 1 string syrup consistency.

Add 2 to 3 whole cardamoms (elachi) to the syrup when boiling.

In a large mixing bowl add 1 ½ cup maida (all purpose flour) and add a few tbsp of hot oil to it. Add cardamom powder for taste and a pinch of baking powder.

Mix together and begin to knead till it becomes a coarse crumb like texture which holds together when squeezed in a fist but breaks apart easily when tapped.

Next add water, a little at a time and continue to knead to make a firm dough.

Flatten the dough out with hands. Do not use a rolling pin. Flatten to a square shape of 1 to 1 ½ inch thickness. Cut the blocks into 1 inch pieces.

Heat oil in a kadai for deep frying. When the oil is hot, slide the cubes of dough into the oil and fry on low heat for upto 12 minutes. When the colour slightly changes and the cubes are cooked, turn the heat to high and continue to fry for 2 minutes in order to let the cubes turn a darker golden brown. Put in a hot chashni for 3 minutes on medium flame. Take it off the heat. Goja is ready.
