  • 2 piece Chicken Breast
  • 4-5 stalk Chinese long beans / green beans
  • As required Kaffir lime leaves
  • As required Thai Red Curry Paste
  • As required Fish sauce
  • As required Sugar
  • As required Oil

step 1

  • STEP 1.Remove the skin and then cut the chicken into bite-size pieces, also wash them. Cut your beans into 1-inch pieces.

  • STEP 1.Take a pan, turn on your stoke and add 1 tbsp oil to the pan, now add 2 tbsp of your thai red curry paste. Keep the flame low. Stir and mash the red curry paste and stir-fry it for about 30 seconds making sure it sizzles on low heat and keep stirring.

  • STEP 1.Now add the chicken pieces to the pan, the flame should be high now, and stir-fry the chicken for 2-4 mins or until the chicken becomes white. If it becomes too dry, splash some water and let it sizzle.

  • STEP 1.Season them with 1 tbsp sugar and 1 tbsp fish sauce, also toss the beans in, give it a good mix and stir fry a little. Add the bruised kaffir lime leaves (pinching out the center spine) for an extra refreshing flavor.

  • STEP 1.Add a little water and stir fry for a few more seconds and turn off the heat. Serve it with sticky rice and egg omelet.
