Mathis are a taste of home for me. As a Baniya from Uttar Pradesh, I’ve grown up seeing homemade mathis made for almost every occasion and enjoyed with chai. But this family favourite has always been deep-fried. For this challenge, I wanted to give it more than just a healthier cooking method—I wanted to reinvent it. I’ve swapped the kadhai for an air fryer and transformed the traditional mathi into a crisp, masala-coated chaat, bringing together the flavours of our old family favourite with a fresh, contemporary twist. ❤️🇮🇳

Ingredients for From Kadhai to Air Fryer: Khasta Masala Mathi Chaat Recipe

  • As required For the mathi:
  • 1 cup Maida
  • 2 tbsp Ghee
  • As required ½ tsp ajwain
  • As required ½ tsp salt
  • As required Water
  • 1 tsp oil/ghee for brushing
  • As required For the chaat:
  • As required ½ cup thick chilled curd
  • As required whisked
  • 2 tbsp Green chutney
  • 2 tbsp sweet tamarind chutney
  • 5 tbsp –finely chopped onion
  • 5 tbsp –finely chopped tomato
  • 2 tbsp nylon sev
  • 1 tbsp Chopped coriander
  • As required ½ tsp chaat masala
  • As required ¼ tsp roasted cumin powder
  • As required red chilli powder
  • As required to taste
  • As required black salt
  • As required to taste

Directions: From Kadhai To Air Fryer: Khasta Masala Mathi Chaat Recipe

  • STEP 1.Mix maida, ghee, ajwain and salt. Rub together until crumbly. Add water gradually and knead into a firm dough. Rest for 15–20 minutes.
  • STEP 2.Divide into small portions, roll into thick discs, and prick thoroughly with a fork.
  • STEP 3.Preheat the air fryer to 170°C. Lightly brush the mathis with oil/ghee.
  • STEP 4.Air-fry at 170°C for 10–14 minutes, turning halfway, until crisp and golden. Allow them to cool completely.

  • STEP 5.For each mathi, layer whisked curd → green chutney → tamarind chutney → onion and tomato.
  • STEP 6.Finish with chaat masala, roasted cumin, chilli powder, black salt, sev and coriander.
  • STEP 7.Serve immediately for the best contrast between the crisp mathi and creamy, tangy toppings.
