  • 0.13 cup Foxtail Millet
  • 1/4 cup Water
  • 1/4 cup Jaggery
  • 0.13 cup Water
  • 1/4 cup Coconut Milk
  • 1/2 tablespoon Ghee
  • 1/2 tablespoon Chopped Nuts
  • 1/4 tablespoon Raisins

Cooking Directions

  • STEP 1.Wash and soak the foxtail millet for 30 minutes.
  • STEP 2.Drain the millet and cook it in a pressure cooker with water until soft.
  • STEP 3.In a separate pan, melt jaggery with water to make a syrup.
  • STEP 4.Add the cooked millet to the jaggery syrup and mix well.
  • STEP 5.Pour in coconut milk and simmer for a few minutes.
  • STEP 6.In a small pan, heat ghee and roast the nuts and raisins until golden.
  • STEP 7.Add the roasted nuts and raisins to the payasam and mix well.
  • STEP 8.Remove from heat and let it cool slightly before serving warm or chilled.

Cooking Tips

  • Make sure to cook the foxtail millet until it is soft and fully cooked.
  • Adjust the sweetness of the payasam by adding more or less jaggery syrup according to your preference.
  • For a richer flavor, use freshly extracted coconut milk.
