Ingredients for Flahari Ravioli..... With Pumpkin Sauce Recipe

  • 1/2 Cup rajgiri flour

Directions: Flahari Ravioli..... With Pumpkin Sauce Recipe

  • STEP 1.For making the ravioli
  • STEP 2.Mix the amaranth flour , beetroot pulp and samak rice flour and add salt to it.
  • STEP 3.Add the ¼ cup warm water slowly and knead firm dough.
  • STEP 4.Don’t add the whole water at once.
  • STEP 5.Cover the dough and keep aside for 5-10 minutes.
  • STEP 6.For the filling:
  • STEP 7.Add butter in a pan.add paneer green chilli,crushed peanuts and salt saute for a minute or ebporaye the water if any.add dhaniya and keep aside
  • STEP 8.For the sauce:
  • STEP 9.Deskin and chop the pumpkin.
  • STEP 10.Heat 1 tsp. ghee/clarified butter/oil in a pan and add the pumpkin. Saute on medium high flame and add a pinch of salt.
  • STEP 11.Saute till a bit soft and slightly brown on all sides.
  • STEP 12.Remember to keep stirring to avoid burning. Keep aside.
  • STEP 13.Now, in the same pan, add 1 green chili slit lengthwise, roughly chopped tomatoes, few black peppercorns and chopped ginger.
  • STEP 14.Saute till the tomatoes turn slightly brown. They should look like grilled.
  • STEP 15.Transfer them to the mixer jar and grind to puree with 1 tbsp. water.
  • STEP 16.Sieve the puree and keep aside.
  • STEP 17.Cooking the Sauce
  • STEP 18.In the same pan, add 1 tbsp. oil/ghee and add the pumpkin puree. Add salt and pepper powder.
  • STEP 19.Let it simmer for 1 minute and then add the pureed tomatoes.
  • STEP 20.Let it cook for 5 minutes
  • STEP 21.Add a bit of water for consistency.
  • STEP 22.Then add the cream and mix well. Cook till one boil and transfer to the serving dish.
  • STEP 23.Steaming the Ravioli:
  • STEP 24.Making Raviolis: Sprinkle some samak rice flour on the shelf.
  • STEP 25.Roll the ravioli dough with a rolling pin. Roll as thick as a roti/chapati.
  • STEP 26.Take a cookie cutter. You may take a round or square cookie cutter.Cut pieces with the cookie cutter.
  • STEP 27.Now take one round and put the filling in the center of the ravioli. Cover it with another roundel.
  • STEP 28.Like this make all the raviolis from the rolled dough.
  • STEP 29.With a fork, seal the edges making a slight mark on the edges.
  • STEP 30.Now, boil water in a pan and add the ravioli boil till done separate fro water.
  • STEP 31.Serve ravioli with sauce and sweetpotato chips.
