This crispy chicken recipe can take your barbecue experience to the next level. Fireman chicken is a juicy recipe that is also known as Cornell chicken. It is perfect for a wholesome dinner with family and friends. This super moist chicken uses a marinade that is prepared with mayonnaise, oil, apple cider vinegar and paprika.

Ingredients for Fireman Chicken Recipe

  • 1 piece Chicken quarters or chicken choice
  • 0.13 cup Mayonnaise
  • 1/4 cup Vegetable oil
  • 1/2 cup Cider vinegar
  • 1/4 tablespoon Fine sea salt
  • 1/4 tablespoon Fine sea salt
  • 1/4 tablespoon Poultry seasoning
  • 0.13 teaspoon Ground black pepper
  • 1/4 tablespoon Garlic powder
  • 1/4 teaspoon Paprika
  • As required Cooking Spray Or Oil, For Greasing

Directions: Fireman Chicken Recipe

Cooking Directions

  • In a bowl, combine mayonnaise, vegetable oil, cider vinegar, sea salt, poultry seasoning, ground black pepper, garlic powder and paprika. Whisk until smooth.
  • Place chicken quarters into a large airtight plastic bag. Cover with marinade, reserving a 1/2 cup for basting.
  • Refrigerate for a minimum of 2 hours, maximum of 24 hours. Heat grill to medium-high heat. Place chicken on the grill on indirect heat. Use reserved marinade, basting the chicken throughout the cooking process.
  • Cook over indirect heat for 35 minutes, turning and basting. At 35 minutes, transfer to direct heat to get a crispy and good char marks. At this time, stop basting. Remove from the grill and allow to rest for 5-10 minutes before serving. Discard any unused marinade. Enjoy.

Cooking Tips

  • While marinating, pierce chicken with a fork several times to allow marinade to sink in well.
  • While basting, if you are using different cuts of chicken, adjust accordingly.

Serving and Storage

  • Fireman chicken can be served with potato salad, baked beans or grilled vegetables for dinner.
  • You can store any leftover barbecue chicken in an airtight container. It will stay in the refrigerator for up to three days.
