A very tasty dish prepared from a combination Fenugreek, shallots,masala and lot of other Ingredients.Vendhayam is nothing but fenugreek seeds. It has a special place in the tamil kitchen and is added to most of the tamarind based curries. It imparts a slight bitter flavour. In this vendhayam curry, the fenugreek is roasted and ground and then added to the curry. Fenugreek aids in digestion and is beneficial for people with diabetes.

Ingredients for Fenugreek Curry/Vendhaya Kulambu/Uluva Curry Recipe

  • 1.50 tablespoon Fenugreek
  • 1 cup shallots/small onions
  • 10 Nos garlic cloves
  • 2 sprig curry leaves
  • 3 teaspoon mustard
  • 2.50 teaspoon turmeric powder
  • 3 teaspoon red chilli powder
  • 2.50 tablespoon masala powder
  • 2 tablespoon coriander powder
  • 1 Nos tomato
  • 1 Nos tamarind
  • 3 cup Water
  • 4 tablespoon sesame oil
  • 2 teaspoon rice flour
  • 1 tablespoon Jaggery
  • As required Salt
  • As required Ingredients for masala
  • 1 cup coriander seeds
  • 80 Nos dry red chilli
  • 1 tablespoon toor dal
  • 1 tablespoon gram dal
  • 1 tablespoon urad dal
  • 1 tablespoon black peppercorns
  • 1 tablespoon cumin seeds
  • 2 teaspoon Fenugreek

  • STEP 1.Soak tamarind in one cup of water for 10 mins.

  • STEP 2.Preparation directions for masala

  • STEP 3.Dry roast one cup of coriander seeds for 2 mins.

  • STEP 4.Now separately roast toor dal,gram dal and urad dal until it turns light brown

step 6

  • STEP 5.In a pan, separately roast black peppercorns,cumin seeds and take it out when splutters.

  • STEP 6.Now roast fenugreek seeds,mustard seeds at low flame, separately and take it out when splutters.

  • STEP 7.Then roast 80 red chillies for two mins at low flame.

  • STEP 8.And let it cool

  • STEP 9.Now grind all the roasted ingredients and make a fine powder.

step 11

  • STEP 1.Add 2 tsp turmeric powder into the grinded powder and mix well. Store the powder in an airtight container
