Ingredients for Fennel Pork Belly Recipe

  • 750 gram Pork Belly
  • 10 gram Ginger
  • 2 No.s Spring onion
  • 2 teaspoon Fennel Seeds
  • 2 No.s Bay leaves
  • 1 teaspoon Sichuan red peppercorns
  • 2 stick Cinnamon piece
  • 1 No.s Star anise
  • 2 tablespoon Oyster Sauce
  • 2 tablespoon Light soy sauce
  • 2 tablespoon Dark soy sauce
  • 2 tablespoon Cooking wine
  • 20 gram Rock sugar

Directions: Fennel Pork Belly Recipe

step 1

  • STEP 1.place 750 gm pork belly in a saucepan, add 500 gm cold water, 1 tsp cooking wine and bring to a boil .
  • STEP 1.boil for 3 minutes. Then remove and drain the pork. Place the well drained pork in a large mixing bowl. Add 2 tsp oyster sauce, 2 tsp light soy sauce, 1 tsp cooking wine and mix well. Leave to marinate for 10 minutes.
  • STEP 2.in a saucepan add 40 ml water, 20 gm rock sugar and heat on medium heat till sugar melts and begins to turn brown. then add the pork and fry for 2 minutes turning the pieces over to coat all sides with the melted sugar.
  • STEP 3.add 2 tsp dark soy sauce, liquid form the marinade, 2 tsp fennel seeds, 2 bay leaves, 2 cinnamon stick, 1 tsp sichuan red peppercorns, 10 gm roughly chopped ginger, 2 roughly chopped spring onions, 1 star anise 500 ml water till just covering the meat level and bring to a boil. turn the heat to low, cover and cook for 40 minutes.
  • STEP 4.after 40 minutes, uncover the pan, turn the heat to high to reduce the liquid. turn off the heat, transfer the pork to a dish and serve with rice or steamed buns.
