Cooking Directions

  • STEP 1.Peel and chop the ripe mangoes into small pieces.
  • STEP 2.In a pan, heat oil and add cumin seeds, mustard seeds, and fenugreek seeds. Let them splutter.
  • STEP 3.Add ginger-garlic paste, green chilies, and curry leaves. Saute for a minute.
  • STEP 4.Add turmeric powder, red chili powder, and salt. Mix well.
  • STEP 5.Add the chopped mangoes and cook for 5 minutes.
  • STEP 6.In a separate bowl, whisk yogurt with gram flour and water to make a smooth paste.
  • STEP 7.Add the yogurt mixture to the pan and stir well.
  • STEP 8.Cook on low heat for 10-15 minutes, stirring occasionally.
  • STEP 9.In a small pan, heat ghee and add asafoetida, mustard seeds, and cumin seeds. Let them splutter.
  • STEP 10.Pour the tempering over the fajeto and mix well.
  • STEP 11.Garnish with fresh coriander leaves and serve hot with rice or roti.
