A soft layered flakey pan fried pancake Extra Flaky Chinese Scallion Pancakes is A traditional Chinese dish. These flavourfull pancakes ar filled with chopped scallion, flavoured with black pepper and are prepared with a simple dough consisting of all purpose flour, water and a little salt.

Ingredients for Extra Flaky Chinese Scallion Pancakes Recipe

  • 10 ounce All purpose flour
  • 1 teaspoon Salt
  • 7 ounce Warm water
  • As required Chopped scallion for filling
  • As required Ingredients for flour oil
  • 1.50 tablespoon All purpose flour
  • 1 teaspoon Black pepper
  • 3 tablespoon Vegetable oil heated up

  • STEP 1.In a large mixing bowl 10 oz all purpose flour, 1 tsp salt. Mix together. Then add 7 oz warm water, add in batches and stir with chopsticks till the flour begins to come together.

  • STEP 1.Then knead by hand till the dough is smooth. It will be a moist dough. If the dough is sticky while kneading dust a little flour. But not too much.

  • STEP 1.Oil a bowl and place the ball of dough in it. Turn it over a few times so that the surface is coated with oil. Cover the dough directly with a plastic film pushing out all the air. Refrigerate overnight.

  • STEP 1.To make the flour oil, in a small bowl add 1 ½ tbsp all purpose flour, 1 tsp black pepper, heat up 3 tbsp of vegetable oil and pour it in. Mix well.

  • STEP 1.Uncover the dough by removing the plastic film. Scrape the dough out and place it on a flat surface. Shape into a long even piece. Cut into 6 even pieces. Apply oil on the flat surface to prevent dough from sticking.

  • STEP 1.Flatten 1 portion of the dough and using a rolling pin roll it into a thin long rectangular sheet. Brush it with some flour oil and sprinkle chopped scallion on it.

  • STEP 1.Roll the sheet along the length of the rectangle to make a rope. Then gently pull it to make it longer and more even. Then from one end begin in to roll it in on the flat surface, like concentric circles. Tuck the end under. This will help to keep the shape and the circle rings won

  • STEP 1.Gently press down and using a rolling pin then roll it out into a circular shape of 7 inches diameter.

  • STEP 1.Heat a cast iron pan. Add a little oil to cover the bottom. Any flat bottom pan can be used.

  • STEP 1.Place the scallion pancake in the pan and fry it on medium heat for 3 to 5 minutes on each side, till the pancake changes colour to golden brown and cooks through.
