Ingredients for Escovitch Fish Recipe

  • 900 gram whole red snapper
  • As required Salt
  • As required Pepper
  • 1 No.s Lemon
  • 1/2 cup vegetable oil
  • 1 No.s bay leaf
  • 1 teaspoon minced garlic
  • 1/2 teaspoon Ginger
  • 1/2 No.s sliced yellow bell pepper
  • 1/2 No.s sliced red bell pepper
  • 1 No.s sliced yellow onion
  • 1 No.s julienned carrot
  • 2 spring thyme
  • 1 No.s scotch bonnet pepper
  • 1/2 teaspoon allspice
  • 1 tablespoon Sugar
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup malt
  • As required Freshly ground pepper

Directions: Escovitch Fish Recipe

step 1

  • STEP 1.1 - ronse the fish with water.

step 2

  • STEP 2.2 - make cuts on both the sides of a fish with a knife.

step 3

  • STEP 3.3 - season the fish with some lemon juice, salt and pepper.

step 4

  • STEP 4.1 - heat some oil in a skillet and fry the fish for 5-7 minutes on each side.

  • STEP 5.2 - in a pan heat some oil and add bay leaf, ginger and garlic.

step 6

  • STEP 6.3 - fry it and then add onion, bell peppers, thyme.

step 7

  • STEP 7.4 - scotch bonnet, carrots, allspice, worcestershire sauce and sugar.

step 8

  • STEP 8.5 - stir cook this for 2-3 minutes and add vinegar, pepper and salt .

step 9

  • STEP 9.6 - give it a nice mix and simmer for 2 more minutes.

step 10

  • STEP 10.7 - discard thyme and bay leaf from the fish and it is ready to serve.
