Ingredients for Eru Recipe

  • 8 cup dry eru/okazi or 5 cups of fresh 250g
  • 10 cup chopped waterleaf or spinach
  • 1.50 cup Crayfish
  • 1.50 cup palm oil
  • 1 teaspoon Salt
  • 2 pound meat and beef tripes
  • 1/2 pound fish
  • 4 Nos small cubes Maggi
  • 2 Nos scotch bonnet pepper blended or whole

Directions: Eru Recipe

step 1

  • STEP 1.If using dried eru soak it in water for 30 mins alongwith 1 1/2 tbsp baking powder

step 3

  • STEP 1. In a large pot add meat and stock and cook it for 7-8 minutes until the stock is dried up and add in spinach and coo it for about 5 mins stir it and cook for anither 5 mins

step 6

  • STEP 1.Now add eru into the spinach and mix well, add oil and cook it for 5 minutes at low flame Then add seasoning cubes,pepper,crayfish and fish.

step 9

  • STEP 1.Add in water if it is too dry
