This Vegan and Gluten Free curry is a must have for Vishu and Onam Sadya and is served with sambar or Moru Curry and rice.

Ingredients for Erissey Recipe

  • 250 milliliter Red beans
  • 250 gram Pumpkin
  • 1 Red chili Powder and 0.5 spoon
  • 3/4 Salt spoon
  • As required Coconut half
  • 4 Galic
  • 1 Cumin seeds spoon
  • 0.13 Jaggery with
  • 3 tablespoon Coconut oil
  • 1/4 Mustard seed spoon
  • 3 Red chili
  • As required Curry leaves

Directions: Erissey Recipe

step 1

  • STEP 1.Grind 2 tbsp of shredded coconut , 4 garlics and 1tsp of cumin seeds

  • STEP 2.Cut and wash the pumpkin

    • STEP 3.Heat 2 tbsp coconut oil in a frying pan

    step 5

    • STEP 4.Add 1 cup of shredded coconut until it turns light brown

    step 6

    • STEP 5.In the pressure cooker, add 250ml of red beans and the pieces of pumpkin

    step 7

    • STEP 6.Add 1tsp of turmeric powder and salt to taste in the pressure cooker

    step 8

    • STEP 7.Add 1/8th jaggery

    • STEP 8.Add the fried shredded coconut in the pressure cooked

    step 10

    • STEP 9.In another frying pan heat 1 tbsp of coconut oil,

    • STEP 10.Add 1tsp of mustard seed, 3 red chilies and curry leaves and let them pop.

    step 12

    • STEP 11.Add it in the pressure cooker, add 2 cups of water and let it cook

    step 13

    • STEP 12.Mix and serve
