  • 1/10 cup Jaggery, Grated
  • 1/10 cup Coconut, Grated
  • as required Water, As Needed
  • as needed Banana Leaves, For Wrapping

Cooking Directions

  • STEP 1.In a bowl, mix rice flour with water to make a smooth batter.
  • STEP 2.Heat a pan and add jaggery and grated coconut. Cook until the jaggery melts and the mixture thickens.
  • STEP 3.Take a banana leaf and spread a thin layer of the rice flour batter. Add a spoonful of the jaggery-coconut mixture in the center.
  • STEP 4.Fold the banana leaf to form a packet and secure it with a string or toothpick.
  • STEP 5.Steam the packets for about 15-20 minutes until the pitha is cooked.
  • STEP 6.Remove from the steamer and let it cool before serving.
  • STEP 7.Serve the Enduri Pitha as a dessert or snack.

Cooking Tips

  • Make sure the rice flour batter is smooth and free of lumps for a perfect texture.
  • You can add cardamom powder or other spices for additional flavor.
