  • 1 Minute enchilada sauce
  • 7.25 ounce Can diced tomatoes preferably fire roasted
  • 0.13 cup Water
  • 1 tablespoon Olive oil
  • 1 teaspoon Apple cider vinegar
  • 1/2 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.13-1/4 teaspoon Chipotle powder - optional plus more to taste, or add a canned chipotle pepper, or smoked paprika and cayenne for heat
  • 3/4 teaspoon Kosher salt
  • 1 teaspoon 2 garlic cloves or granulated garlic
  • 1/2 teaspoon Oregano- optional dry or fresh
  • 3 inch 8 x corn tortillas
  • 7.50 ounce 2 x cans seasoned black beans like trader joe's cuban style black beans or substitute 0.5 with cooked chicken, browned ground meat, or chorizo
  • 8 ounce Bag frozen fire roasted corn - or sub other cooked veggies
  • 1 cup Grated mexican style cheese or blend
  • 2 ounce Can green chilies preferably fire roasted
