Pattie stuffed with chicken and vegetables loaded with spices.Empadão is a traditional Portuguese dish,also popular in Brazil. It is a preparation made on a oven that can contain red meat, chicken,tuna,codfish and seafood between layers of mashed potato, rice,bread or inside of wheat flour pasta,although the ground meat-mashed potatoes version is the more tradicionally used,similar to the English Shepherd's pie.The filling consists usually of a refogado of red ground/sliced meat or codfish with onion and garlic. Tomato, mushrooms, sweet corn, green peas and requeijão are also used.In one recipe, Empadão is made using only pão ralado (ground bread) and eggs as a filling which is then cooked on the oven like a pudding.

Ingredients for Empadão Recipe

  • 0.33 cup all purpose flour sifted
  • 1/10 tablespoon Salt
  • 0.15 teaspoon Granulated Sugar
  • 0.15 cup unsalted butter cold and cut into chunks, 3 sticks
  • 1/5 No.s large eggs
  • 0.03 cup ice water
  • 1/5 tablespoon olive oil
  • 1/10 No.s medium white onion small diced
  • 0.40 cloves garlic minced
  • 0.40 cup shredded cooked chicken
  • 30 gram canned diced tomatoes
  • 80 gram frozen peas
  • 80 gram frozen corn kernels
  • 0.03 cup chopped green onions
  • 1/2 cup low sodium chicken stock
  • 1/10 tablespoon tomato paste
  • 0.03 cup dry white wine
  • 0.80 tablespoon unsalted butter 1 stick
  • 1/10 cup All purpose flour
  • As required Salt and freshly ground black pepper
  • 1/10 No.s beaten egg

Directions: Empadão Recipe

  • STEP 1.take some flour, salt, sugar and butter in a bowl. Mix them well and knead a dough out of it . Roll the dough flat and cover it with a plastic wrap and refrigerate for an hour.
  • STEP 2.Heat some oil in a pan and saute onions and garlic in it for 2-3 minutes. To this add peas , tomato , corn and green onions . In a separate pan boil chicken stock tomato paste and wine . In another pan heat some butter and add flour to it .
  • STEP 3.Roast it for 2 minutes and add stock to it while whisking continuously. Season it with some salt and pepper and combine it with the chicken mix. Cut the dough into four pieces and roll it into circles a bit longer than the pie pan . Place the rolled dough on the pie pan and press gently.
  • STEP 4.Spread the filling inside the pan and moist the edges of the dough with a little water. Press the top crust against the bottom one and seal it well. Cut an x slit in the centre using a knife .Refrigerate the pie for 30-60 minutes. Preheat the oven at 350 degree f.
  • STEP 5.Bake it for 15 more minutes or till it burns golden brown.
