A sweet pancake, elanji is a Malabari teatime snack which is quick and easy to prepare. These simple crepes are made with egg and flour and stuffed with coconut. The use of cardamom gives this dish a pleasant aroma and flavour. Also known as madakku san or love letter, elanji is a distant cousin of serabi, the Indonesian pancake. Serabi is prepared with either coconut milk or shredded coconut. It is a popular street food. Every Indonesian province has its own serabi recipes in accordance with local tastes. The origins of this pancake are obscure, but it is believed that the word ‘serabi’ was derived from Serbia since the person who created serabi was actually trying to recreate palačinke, a Serbian pancake. Khanom krok, found in Thailand, is very similar to serabi.
