Ela Ada or Ada is a traditional Indian sweet and Kerala delicacy, comprising rice parcels wrapped in rice flour dough, steamed in banana leaf with sweet fillings, and served as a part of breakfast or an evening snack. It can also be seen in various parts of Tamil Nadu. Many Keralites even have a tradition to make Ada for Onam Sadya. The chakka varatti or the sweet filling is usually the classic coconut jaggery puran. However, this sweet filling is different, making the ada slightly tricky. Steaming in banana leaf and the delicious coconut-jaggery puran filling inside the rice pocket gives a lovely taste to the dish. Are you living abroad? Or don’t you have the banana leaf option? Ingredients for Ela Ada Recipe

  • 50 gram Jaggery
  • As required Water
  • 3/4 teaspoon Ghee
  • 1/4 cup Grated coconut
  • 0.13 teaspoon Cardamom powder
  • As required Salt
  • 1/4 cup Rice flour
  • As required Boiled water
  • As required Banana leaf

Cooking Directions for filling

  • STEP 1.In a saucepan add 200gm jaggery and 150ml water. Melt down the jaggery and keep it aside.
  • STEP 2.In a wide pan add 2 tbsp of ghee and 1 cup of grated coconut. Saute it for 2-3 minutes.
  • STEP 3.Now pour in the melted jaggery with a sieve into the cooking pan.
  • STEP 4.Add ½ tsp of cardamom powder, 1 tbsp of ghee and cook until the ingredients are dried of excess water.

Cooking Directions for Dough

  • STEP 1.In a saucepan, boil ½ cup of water with a pinch of salt.
  • STEP 2.Add 1 cup of rice flour and 1 tsp of ghee in a bowl. Pour in the boiled water to mix right away from the stove.
  • STEP 3.Now mix the ingredients. Knead to form a dough.

Cooking Directions for Ela ada

  • STEP 1.Take balls from the dough. Place the ball into your hand and pat pat with the fingers to form a big round layer.
  • STEP 2.Now place this round layer into the center of the banana leaf.
  • STEP 3.Stuff the fillings inside and fold from the center.
  • STEP 4.In a double steamer, steam cook the ela ada for 10-15 minutes on a medium flame.
