Ingredients for Egusi Soup Recipe

  • 400 gram Egusi Melon
  • 216 gram Palm Oil
  • As required Handful crayfish
  • 3 tablespoon locust bean
  • 680 gram Spinach
  • 2 Nos red bell pepper
  • 1 Nos habanero pepper
  • 1 Nos Fresno pepper
  • 2 Nos onions
  • As required Stock cube
  • As required Beef,Tripe,Dry Fish, Cow Leg
  • As required Salt

Directions: Egusi Soup Recipe

step 1

  • STEP 1.Blend onions and all the peppers along with some water to make a paste

step 2

  • STEP 2.Separately grind egusi seeds,onion,crayfish and a lit bit of water to make a paste

step 4

  • STEP 1.Add palm oil in a pan, heat it and add onions,half of the locust bean and fry it for a couple of minutes.

step 6

  • STEP 1. Now add blend peppers paste,cover it with the lid and cook it for 15 mins with occasional stirring

step 7

  • STEP 1.Add beef stock, remaining locust beans,and salt as per taste.

  • STEP 1.Cover it with the lid and cook for 3 minutes. Now add the egusi paste,little water and cover it again without mixing.

step 10

  • STEP 1.Cook it at medium flame for 15 minutes. and add dry fish cow meat beef. Once again cover it and cook it for about 5 mins and then add spinach leaves.

step 13

  • STEP 1.Mix thoroughly and cook it at low flame for 3-5 mins and then serve.
