  • 1/4 Small Snake Gourd, Chopped
  • 1/4 Onion, Finely Chopped

  • 1/4 teaspoon Mustard Seeds
  • 1/4 teaspoon Cumin Seeds

  • 1/2 tablespoon Sambar Powder
  • 1/4 tablespoon Tamarind Extract

Cooking Directions

  • STEP 1.To begin, pressure cook the lentils until soft and mushy.
  • STEP 2.In a separate pan, heat oil and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add chopped onions, garlic, and green chilies. Saute until onions turn translucent.
  • STEP 4.Next, add the chopped eggplant and snake gourd. Cook for a few minutes until they are slightly tender.
  • STEP 5.Add turmeric powder, sambar powder, and salt. Mix well.
  • STEP 6.Pour in the tamarind extract and cooked lentils. Stir everything together.
  • STEP 7.Cover and simmer the sambar for about 15-20 minutes until the vegetables are fully cooked and the flavors are well blended.
  • STEP 8.Garnish with fresh coriander leaves and serve hot with steamed rice or dosa.

Cooking Tips

  • You can adjust the consistency of the sambar by adding more or less water.
  • For a thicker sambar, mash some of the cooked lentils before adding them to the pan.
  • If you don't have sambar powder, you can substitute it with a mixture of coriander powder, cumin powder, and red chili powder.
