This is a delicious side dish made with fried eggplants and potatoes and delicious sauce with mayonnaise and yoghurt. A great salad to make for a party
Ingredients for Eggplant 🍆 and Potato 🥔 Salad 🥗 Recipe
1/4 Pieces eggplant cut in circles
As Required Salt
As Required Paprika
As Required Turmeric
As Required Oil for shallow frying
A Handful Handful of parsley
As Required For Sauce
3/4 Pieces Cloves garlic crushed
As Required Salt
As Required Pepper
1/2 Tbsp n mayonnaise
1/4 Cup yoghurt
As Required Pomegranate seeds for garnish( optional)
As Required Sumac (optional)
Directions: Eggplant 🍆 And Potato 🥔 Salad 🥗 Recipe
STEP 1.Boil the potato with little salt in water till 70% cooked
STEP 2.Marinate with salt(if needed) paprika/chilli powder, turmeric and shallow fry in oil till outside turns crispy and golden brown.
STEP 3.Marinate egg plants with salt, paprika/ chilli powder, turmeric and shallow fry till done
STEP 4.Mix the crushed garlic, salt, pepper, mayonnaise & yoghurt for the sauce
STEP 5.In a pan layer egg plant, potatoes, sprinkle some crushed pepper, add in coriander leaves/ patsley
STEP 6.Pour the sauce on top and garnish with leaves, pomegranate seeds and sumac
