Ingredients for Eggplant 🍆 and Potato 🥔 Salad 🥗 Recipe

  • 1/4 Pieces eggplant cut in circles
  • As Required Salt
  • As Required Paprika
  • As Required Turmeric
  • As Required Oil for shallow frying
  • A Handful Handful of parsley
  • As Required For Sauce
  • 3/4 Pieces Cloves garlic crushed
  • As Required Salt
  • As Required Pepper
  • 1/2 Tbsp n mayonnaise
  • 1/4 Cup yoghurt
  • As Required Pomegranate seeds for garnish( optional)
  • As Required Sumac (optional)

Directions: Eggplant 🍆 And Potato 🥔 Salad 🥗 Recipe

  • STEP 1.Boil the potato with little salt in water till 70% cooked
  • STEP 2.Marinate with salt(if needed) paprika/chilli powder, turmeric and shallow fry in oil till outside turns crispy and golden brown.
  • STEP 3.Marinate egg plants with salt, paprika/ chilli powder, turmeric and shallow fry till done
  • STEP 4.Mix the crushed garlic, salt, pepper, mayonnaise & yoghurt for the sauce
  • STEP 5.In a pan layer egg plant, potatoes, sprinkle some crushed pepper, add in coriander leaves/ patsley
  • STEP 6.Pour the sauce on top and garnish with leaves, pomegranate seeds and sumac
