Mango season comes once in a year . Many desserts are prepared in various households using the king of fruits , the mango, to celebrate the advent of mango season . Among them baking a cake means giving a royal treat to mango fruit . Here the mango cake is baked by blending the freshly extracted mango pulp with butter and various dry ingredients to prepare a soft , fluffy , yellowish colored mouth watering fruit flavored cake .

Ingredients for Eggless mango cake Recipe

  • As required One heaped cup of refined flour .(maida).
  • As required Half cup of full ripe mango pulp .
  • 1/2 tablespoons of salted butter .
  • As required Half cup of milk .
  • As required Powdered Sugar or ¼ cup .
  • As required One teaspoon of baking powder.
  • As required Half teaspoon of baking soda .
  • As required One teaspoon of vanilla essence
  • As required Cherry and mango slices as cake toppings

Directions: Eggless Mango Cake Recipe

  • STEP 1.Mix refined flour, baking powder ,and baking soda in a bowl . Keep aside .Sieve it properly .
  • STEP 2.2.Peel and chop fully ripened mangoes into small cubes and blend them in a mixer - grinder to a fine and smooth puree .
  • STEP 3.Then proceed to the next step of preparing the wet ingredients for the cake batter .Take a bowl, pour melted butter and sugar and mix it . Then add the accurate amount of milk . Whisk it for a while with a balloon whisk to get a smooth creamy butter mixture .
  • STEP 4.4. To the butter mixture ,then add the previously prepared mango puree .Whisk it very well to make a smooth homogeneous mixture. add powdered sugar as required to balance the sweetness .
  • STEP 5.5.Whisk the butter mixture multiple times to get a smooth , even mixture .
  • STEP 6.Since the mango puree is already sweet in nature , we will need to adjust the amount of sugar as per our taste .
  • STEP 7. Whisk it very well to make a smooth homogeneous mixture.
  • STEP 8.Add one teaspoon of vanilla essence to it
  • STEP 9.Then to the butter mixture add the dry refined flour and other dry ingredients at regular intervals and beat it with an electric beater till it becomes light and fluffy . Preheat the oven to 180 degrees .
  • STEP 10.Preheat the oven to 180 degrees .
  • STEP 11. Grease the loaf tin with some butter and dust with some refined flour .This will help demold the cake easily after baking .
  • STEP 12.Pour batter into the lined tin and tap gently .
  • STEP 13.Top the cake with some cherries and mango slices.
  • STEP 14.Put the tin in the preheated oven and bake at 180 degrees for 35 minutes .To check the readiness of the cake , poke a skewer or toothpick on the cake , if it comes clean it is perfectly baked .
  • STEP 15.Remove from heat , cool down to room temperature , demold and slice .
  • STEP 16.Serve .
