STEP 1.Chop Onion, tomato and capsicum into cubes and finely mince ginger.
STEP 2.Boil Eggs, de shell and prick eggs with help of a fork, take hung curd
STEP 3.In a mixing bowl, add curd, add all mentioned marination spices + oil and give a good mix.
STEP 4.Add all diced veggies + boiled eggs and mix well, keep in rest for 1/2 hour - 1 hour.
STEP 5.Assemble all ingredients for gravy.
STEP 6.In moderately heated pan add oil, add whole spices and sauté for few seconds, then add chopped onion and sauté till translucent, add ginger garlic paste and sauté till rawness goes off, then add cashews and sauté for 2-3 minutes.
STEP 7.Add chopped tomatoes + slight salt and sauté, tomatoes turn mushy.
STEP 8.Let it cool and transfer to mixer grinder to make a smooth paste.
STEP 9.Don’t forget to discard the whole spices before grinding.
STEP 10.Now fry the marinated eggs.
STEP 11.Fry the marinated veggies also till golden brown and keep aside.
STEP 12.Assemble all ingredients for final gravy.
STEP 13.In pan add oil, add finely chopped onion + green chilli and sauté till translucent, then add chopped tomatoes and sauté for few seconds
STEP 14.Then add all mentioned spices and stir fry till oil is seen on surface. Then add the masala smooth paste along with little water and cook for 3-4 minutes.
STEP 15.Now add the marinade mixture along with little water and cook for few minutes, add salt + sugar in this stage.
STEP 16.Now add chopped coriander and mix well. Cook for few minutes.
STEP 17.Now add fried eggs + veggies and mix gently. Simmer for 2-3 minutes.
STEP 18.dish is ready
