Egg tadka is a popular street food of India with hot and spicy moong dal and healthy scrambled eggs cooked with curry masala. It is usually served with parathas.

Wash and soak the dal overnight
Heat a pan and add ghee with mustard oil. Fry the chopped onions until golden
Add the chopped ginger. Add garlic and green chilies , fry for 30 second
Add cumin powder.coriander powder,turmeric, kashmiri red chili powder and garam masala
Add the tomatoes, salt and mix well. Now add in your dals, water and transfer the mix into a pressure cooker, add some ghee and cook it for 10 minutes.
In a pan heat vegetable oil Add chopped onion, garlic and tomatoes and tadka from the pressure cooker.
Add butter , kasuri methi and coriander leaves. Add in the eggs and cook well.
