  • STEP 1.Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • STEP 2.In a bowl, beat the eggs with salt, pepper, and chopped onions, green chilies, and coriander leaves.
  • STEP 3.Heat oil in a pan and add cumin seeds. Once they splutter, add the egg mixture and cook until the eggs are scrambled and cooked through.
  • STEP 4.Roll out the puff pastry on a floured surface and cut it into squares. Place a spoonful of the egg mixture in the center of each square.
  • STEP 5.Fold the pastry over the filling to form a triangle and press the edges to seal. Place the puffs on the prepared baking sheet.
  • STEP 6.Bake for 15-20 minutes or until the puffs are golden brown and crispy.
  • STEP 7.Serve hot with ketchup or chutney.
