#egg #BMST There's an old saying: “Breakfast like a king; lunch like a prince; dinner like a pauper.” Make the first meal of your day your biggest. The first time I had shakshuka was years ago on my family trip to Grease. I remember instantly loving the meal and the simple yet bold flavors and spices. I instantly did some research work on the recipe variations and this recipe of mine is a modified version of in Indian style which makes a complete breakfast.

Ingredients for Egg Poached Vegetables Recipe

  • 1/4 Cup rajma beans
  • 1/4 Pieces onion
  • 3/4 Pieces garlic cloves(peeled)
  • 0.13 Cups green capsicum chopped in small
  • 0.13 Cup red bell pepper
  • 0.13 Cups yellow bell pepper
  • 1 Pieces tomatoes
  • 0.06 Cup tomato sauce
  • 3/4 Tbsp olive oil
  • 1 Pieces eggs
  • 25 g fresh paneer (cottage cheese)
  • 1/4 Tsp salt
  • 0.13 Tsp sugar
  • 1/4 Tsp pepper powder
  • 1/4 Tsp cumin powder
  • Sprig coriander leaves
  • 0.06 Cup pomegranate seeds

Directions: Egg Poached Vegetables Recipe

  • STEP 1.Soak overnight some rajma beans and boil and strain and keep aside. In a non-stick pan add 3 tbsp olive oil add minced garlic cloves, onions. Now add chopped red, yellow, green bell peppers and fry.
  • STEP 2.Add diced tomatoes and 1/4 cup tomato sauce and cook again.
  • STEP 3.Add the boiled rajma kidney beans and some water and cook till the tomatoes become mushy. Add salt and sugar to taste. Add 1 tsp cumin powder. Cover with a lid and see that the gravy is nicely cooked and mushy.
  • STEP 4.Now add paneer cubes and just mix well.
  • STEP 5.Once the gravy gets cooked with the flavours of veggies make 4 holes with a spoon and just crack and pour eggs. Sprinkle some pepper powder on the yolks and just allow to cook till the egg whites are cooked properly. Sprinkle some chopped coriander leaves and pomegranate seeds.
  • STEP 6.In my family I cannot have the runny yolk so after I serve my family the egg poached vegetables with a runny yolk, I usually allow my portion to stay on the oven so that the yolk also gets cooked on the low flame. We usually prefer this dish with a butter toast. So a wholesome breakfast meal is on your table loaded with taste and nutrients.
