STEP 2.Boil eggs, de shell. Prick eggs and marinade with salt+ turmeric + cumin + coriander and marinade for 10 - 15 minutes.

STEP 5.Make paste of onion and keep aside. Take coriander + mint + ginger + green chilli + curd.
STEP 6.Make a smooth paste of coriander + mint + green chilli + ginger + curd + salt.
STEP 7.Assemble all other ingredients for gravy
STEP 8.Fry marinaded eggs till golden brown and keep aside.
STEP 9.Now heat oil, add cumin seeds + bay leaf + cardamom + cloves +‘cinnamon and allow to crackle, then add garlic and sauté for few seconds.
STEP 10.Then add onion paste and stir fry till rawness goes off. This takes around 3-4 minutes.
STEP 11.Now add chopped tomatoes and sauté for few seconds, then add coriander + turmeric + chilli powder and stir fry till spices leaves oil.
STEP 12.Now add the green paste and cook for 4-5 minutes by adding garam masala till water evaporates to some extent.
STEP 13.Now add water and give 2-3 times boil, then add eggs + sugar and cook further for 4-5 minutes.
STEP 14.Simmer for 2-3 minutes and dish is done. Lemon juice can be added at this stage which is optional.
STEP 15.Egg Hariyali is ready to serve, serve either with plain rice / roti / paratha / naan.
