A golden egg fried rice made by mixing the rice with egg yolk before frying it; flavoured with peas,carrots and shredded cabbage.Try to use day-old rice. This ensures that there isn't too much moisture in the rice so that the fried rice does not end up being too mushy. If you are cooking rice on the same day, let the rice cool completely before stir frying.If you want more flavor, you can add a drizzle of my teriyaki sauce or hoisin sauce.

Ingredients for Egg Fried Rice Recipe

  • 2 cup Cooked Rice
  • 2 tablespoon Oil to fry the rice
  • 1/4 cup Green Peas
  • 1/4 cup Carrot cubed
  • 1/2 cup Cabbage shredded
  • 4 No.s Eggs
  • 1 tablespoon Vegetable oilto fry the vegetables
  • 1/4 teaspoon Salt

Directions: Egg Fried Rice Recipe

step 1

  • STEP 1.-1heat a wok and add 1 tbsp vegetables oil, add 4 egg whites and stir till cooked.

step 2

  • STEP 2.-2then add ¼ cup green peas, ¼ cup cubed carrots, ½ cup shredded cabbage. Mix together well and cook for 1 to 2 minutes. Add ¼ tsp salt . Mix and set aside.

  • STEP 3.-3in a mixing bowl add 2 cups of cooked rice and 4 egg yolks. Mix together till no white rice is visible.

step 4

  • STEP 4.-4heat the wok to high and then lower to medium heat. Add 2 tbsp cold vegetable oil and add the rice in immediately. This helps the rice not to stick to the bottom of the wok. Using the spatula, break up the lumps of rice so that the rice can cook evenly. After stirring for a few minutes there will be the aroma of fried egg.

  • STEP 5.-5at this stage add 1 tbsp rose wine for fragrance (optional)

  • STEP 6.-6next add the vegetables to the wok, add ½ tsp salt and ground black pepper. Mix together well. Turn off the heat.
