Also known as Bengali egg chop or Dimer Devil, this dish is available at fast food stalls around Kolkata. It is especially popular during the Durga Puja season and also all year round. Bengali egg devil is different from devilled eggs, in which the boiled egg yolk is mixed with mayonnaise, mustard and salt. It is believed that the word 'devil' was used to refer to dishes that were gussied up with spices and other condiments. Since spices were expensive earlier, 'deviled’ dishes' were enjoyed mainly by the rich. Egg devil is also believed to be inspired by the Mughlai dish Nargisi kofta, which is a part of Anglo-Indian cuisine too. Food writers believe that this batter fried snack came into existence during colonial times. The story goes that chefs in British kitchens wanted to try something new and ended up stuffing hard boiled eggs with boiled potato, onions and spices, and coated them in breadcrumbs before deep-frying them.

Ingredients for Egg Devil Recipe

  • 3 Boiled eggs
  • 200 gram Mutton keema
  • As required Mixed masala
  • 1 teaspoon Gorom masala
  • 1 teaspoon Bhaja masala
  • 1 teaspoon Amchur powder
  • As required Ketchup
  • 50 gram Breadcrumbs
  • As required Chopped Onion
  • 6 gram Chopped garlic
  • 12 gram Chopped ginger
  • 2 Chopped green chilies
  • As required Mustard oil
  • 4 bay leaves
  • As required Eggs battered
  • As required Plain flour

Cooking Directions

  • STEP 1.Heat a pan with oil. Add bay leaves and chopped onion, and fry until brown.
  • STEP 1.Add ginger and garlic. Add the mixed masala and mix. Fry it well.
  • STEP 2.Add water and mix.
  • STEP 3.Cook until the oil separates.
  • STEP 4.Add the keema and mix.
  • STEP 5.Add amchur, masala and garlic.
  • STEP 6.Add gorom masala and ketchup.
  • STEP 7.Add bhaja masala, green chillies and some breadcrumbs.
  • STEP 8.Knead into a paste and cool.
  • STEP 9.Cover the boiled eggs with the keema and form into a tight egg shape.
  • STEP 10.Dip it in flour, and then egg and the breadcrumbs.
  • STEP 11.Again, dip in egg and then breadcrumbs.
  • STEP 12.Deep fry the prepared egg devils.

Storage And Serving Method

  • STEP 1.Serve as snacks with ketchup.
