Directions: Egg Bajji Recipe

  • STEP 1.​Prepare the Eggs: Hard-boil the eggs, let them cool, and peel them. Slice them into halves or thick rounds.
  • STEP 2.​Make the Batter: In a bowl, whisk together the besan, rice flour, red chili powder, turmeric, ginger-garlic paste, ajwain, baking soda, and salt. Gradually add water, mixing to form a thick, smooth batter that can easily coat the egg slices. It should be a bit thicker than a deep-frying batter to ensure it doesn't drip off in the air fryer
  • STEP 3.​Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  • STEP 4.​Coat the Eggs: Dip each egg slice into the batter, ensuring it's completely and evenly coated. Allow any excess batter to drip off.
  • STEP 5.​Arrange in the Air Fryer: Lightly grease the air fryer basket with oil spray. Carefully place the battered egg slices in a single layer, making sure they are not touching. This is crucial for even cooking and crispiness.
  • STEP 6.Spray with Oil: Once the eggs are in the basket, lightly spray the tops of them with oil. This helps them get that signature golden-brown color and a crispy texture.
  • STEP 7.​Air Fry: Cook for 10-15 minutes, flipping them halfway through. The cooking time can vary depending on your air fryer model and how crispy you want them. You're looking for a golden-brown color and a firm, cooked batter.
  • STEP 8.​Serve: Once done, remove the egg bajjis from the air fryer and serve them hot with your favorite chutney or sauce.
