Ingredients for Efo Riro(Spinach Stew) Recipe

  • 1.50 pound Spinach
  • 3 Nos red bell peppers
  • 2 Nos scotch bonnet
  • 1 Nos onion
  • 1/4 cup palm oil
  • 2 tablespoon Crayfish
  • 2 tablespoon locust beans
  • 1/2 cup stock fish
  • 1 handful dried prawn
  • 1 Nos onion medium size
  • 1 Nos bouillon cube
  • 1 pound mixture of beef,tripe and cow skin

Directions: Efo Riro(spinach Stew) Recipe

step 1

  • STEP 1.Wash and clean fish . In a bowl add fish and season it with onion powder, paprika, black pepper, seasoning powder and salt.

  • STEP 1.Mix the seasoning ingredients well with the fish through bare hands. Once marinated, cover the fish bowl and set it aside for 10-15 mins.

  • STEP 1.Blend red peppers, scotch bonnet along with one onion to make a paste . Add oil in a pot & heat it.

  • STEP 1.Add chopped onions followed by marinated fish and fry it until brown. Once browned take the fish out and keep it aside.

  • STEP 1. Empty the cooking pot and using the same add palm oil & heat it. Add chopped onions and saute it.

step 6

  • STEP 1. Now add the blend ingredients and cook it for 15 mins with the lid on. then add locust beans, crayfish, seasoning powder and salt as per taste.

  • STEP 1.Add dry fish and mix it with the gravy. Now add the fried fish into the stew and cook it for about 5 mins with the lid on.

step 8

  • STEP 1.Now remove the fried fish from the stew and add the shrimps and cook it for about 4 mins. Then add the blanched spinach and cook it for 3-5 mins.

step 9

  • STEP 1.Serve hot alongside fried fish.
