  • 1/4 teaspoon Cumin Powder
  • 1/4 teaspoon Fennel Powder
  • 1/4 teaspoon Jaggery
  • 1/4 cup Tamarind Pulp
  • As required Salt To Taste
  • as per your need Fresh Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Heat oil in a pan and fry the brinjals until they turn golden brown.
  • STEP 2.In the same pan, add mustard seeds, fennel seeds, and curry leaves.
  • STEP 3.Add onions, ginger-garlic paste, and spices. Cook until the onions turn golden brown.
  • STEP 4.Add tamarind pulp, jaggery, and salt. Simmer the gravy until the brinjals are cooked.
  • STEP 5.Garnish with coriander leaves and serve hot with rice or roti.
