Easy Double Chocolate Chip Cookies Recipe - Chewy & Fudgy Homemade Cookies Recipe

Recipe By Slurrp Editorial
If you are the kind of chocoholic who believes a single kind is never enough for making desserts, then these double chocolate chip cookies are made for you. A cocoa-rich dough gets loaded with generous amounts of chocolate chips, and is then baked until the edges turn lightly crisp while the centres remain soft and fudgey. These cookies are easy enough for a weekday baking session, yet indulgent enough to disappear from any dessert table, festive or ordinary.

Directions: Easy Double Chocolate Chip Cookies Recipe - Chewy & Fudgy Homemade Cookies

  • STEP 1.Preheat your oven to 175°C first. Then line two baking trays with baking parchment.
  • STEP 2.In a large bowl, beat your softened butter, brown sugar and caster sugar until the mix is pale, creamy and slightly fluffy. This should take about 2 to 3 minutes.
  • STEP 3.Now beat in the egg and vanilla extract until fully incorporated. The mixture may start looking slightly loose at this stage.
  • STEP 4.In the meantime, in a separate bowl, whisk together your dry ingredients, aka the plain flour, cocoa powder, baking soda, and salt. This helps distribute the cocoa and raising agent evenly through your dough.
  • STEP 5.Gradually add your dry ingredients to the butter mixture, mixing just until no dry flour remains. Do not overmix. If the dough feels unusually dry or crumbly, then add the milk, one tablespoon at a time.
  • STEP 6.Time to fold in the chocolate chips and chopped dark chocolate. Remember to reserve a small handful for pressing on top of your cookies just before baking.
  • STEP 7.Now cover and refrigerate the dough for 20 to 30 minutes. Chilling helps the cookies hold their shape and gives the chocolate flavour more depth and finesse.
  • STEP 8.Once chilled, scoop out roughly 2 tablespoons of dough for each cookie and roll into balls. Place them on your prepared trays, leaving at least 5 cm between each one. Gently flatten their tops.
  • STEP 9.Bake for 10 to 12 minutes, or until the edges look set but the centres still appear slightly soft. Do not wait for the cookies to look completely firm in the oven, as they will continue to cook as they cool.
  • STEP 10.Finally, press your reserved chocolate chips and chopped chocolate pieces into the warm cookies. Sprinkle with a little flaky sea salt, if desired.
  • STEP 11.Now leave the cookies on the baking tray for 5 minutes before transferring them to a wire rack. Do not worry, they will firm up around the edges while retaining a soft, fudgy centre.
