- 1.80 kilogram firm ripe papaya or semi ripe
- 1.40 kilogram Sugar
- As required Water

How to Make Dulce De Mamón With Ripe Papaya Recipe
STEP 01
1 - peel and cut the papaya into big chunks.
STEP 02
2 - in a pan take the papaya chunks and enough water to immerse them completely.
STEP 03
3 - boil it for five minutes and strain the water.
STEP 04
4 - rinse the papaya pieces with cold water.
STEP 05
5 - put these pieces in a bowl, sprinkle baking soda on top and add some cold water.
STEP 06
6 - mix everything well.
STEP 07
7 - keep this aside for 4 hours.
STEP 08
8 - rinse the papaya with tap water.
STEP 09
9 - add sugar to the bowl and refrigerate it for 8 hours.

10 - transfer the papaya sugar mix to a pan.
STEP 11
11 - add enough water to the pan to cover the papaya mix by an inch.

12 - add half of the total sugar and mix well.

13 - cook it on high flame for 3 minutes.

14 - reduce the heat and cook for 3 hours.

15 - switch off the flame and let this mixture rest for 8 hours.

16 - after 8 hours place the pan on the stove and add remaining sugar and flavouring of your choice in it.

17 - move the pan a little or tilt it to sides.

18 - cook it for an hour on low heat.

19 - let the mixture cool and then transfer it into a glass jar.
