my favourite This recipe is a very lost recipe of Multani’s Story behind is when daughter use to go back to there home . There mother use to make this roti . As there was long travel time . My grandma use to make this Doli roti . I wanted to bring that era back relive my childhood.

Ingredients for Dolli ki roti Recipe

  • 1/4 tbsp 1 tbsp yeast
  • 0.13 cup 1/2 cup Chana dal (Bengal Gram
  • 0.13 cup 1/2 Cup
  • 1/4 tbsp 1 tbsp
  • 0.38 cups 1 1/2 cups
  • 1/4 teaspoon 1 teaspoon
  • As Required Oil
  • As Required To Deep Fry
  • 1/4 g For filling
  • 1/4 cups 1 cups
  • As Required Salt
  • to taste to taste
  • 1/4 teaspoon 1 teaspoon
  • 1/2 teaspoons 2 teaspoons
  • 0.13 teaspoon 1/2 teaspoon dry mang
  • 0.06 teaspoon 1/4 teaspoon
  • 1/4 inch 2 inch
  • 1/4 Pieces Green chilli chopped
  • As Required water

Directions: Dolli Ki Roti Recipe

  • STEP 1.1. To prepare Doli Ki Roti Recipe, get prepped with all the ingredients required and prepare the homemade yeast water first.
  • STEP 2.2. Leave aside poppy seed jaggery and Channa dal rest all the ingredients should be roughly crushed in silatta.
  • STEP 3.4. In a saucepan, add water (500 ml) and bring it to boil. Put all the ingredients listed in "Yeast Water", including crushed items ,chana dal, khus khus (or poppy seeds) and jaggery
  • STEP 4.6. Cover and boil for 5 minutes until jaggery dissolves and the chana dal softens a bit. Let it remain covered. Transfer it to a bowl and Wrap it with a dry and warm cloth and keep in the warmest corner of your kitchen. Let it stay undisturbed for 24 hours exactly.
  • STEP 5.8. To prepare the dough take the frothy water after 24 hours add whole wheat flour and make a soft dough.
  • STEP 6.9. Cover it again with lid and wrap with a warm cloth and keep in a warm place for 3 more hours.
  • STEP 7.10. After 3 hours exactly, the dough should all be bubbly and fermented .
  • STEP 8.To make the filling:
  • STEP 9.1. Clean chana dal and pressure cook chana dal, salt, turmeric,a little water for 2 whistles or till cooked soft. drain the remaining water completely and use that as veg stock (use in making regular chapatis dough )
  • STEP 10.2. In a kadai add1/2 tsp salt jeera grated ginger and chilli add boiled chana dal salt, chilli powder ,dry mango powder and sauté for 2 min.
  • STEP 11.To make Doli Ki Roti Recipe:
  • STEP 12.1. Heat oil in a deep frying pan on medium heat.
  • STEP 13.2. Pinch out a ball size and make an indent in it to fit the filling. Fill about 2 tablespoons of filling and close the sides of the poori. flatten it with hands until it forms a disc of the size of the palm.
  • STEP 14.3. Drop the flattened filled dough of Doli Ki Roti in hot oil and cook to see it puffed up and evenly golden on both side. Keep flipping as required, till done.
  • STEP 15.4. Repeat till all the dough and filling is used.
  • STEP 16.5. Serve Doli Ki Roti Recipe with a bowl of raita or Multani mix veg.
