Cooking Directions

  • STEP 1.Soak the chana dal in water for 4-5 hours.
  • STEP 2.Drain the dal and grind it into a coarse paste.
  • STEP 3.Add ginger paste, turmeric powder, red chili powder, cumin powder, and salt to the dal paste. Mix well.
  • STEP 4.Heat oil in a pan and add cumin seeds, bay leaves, and dried red chilies.
  • STEP 5.Add the dal mixture and cook until it thickens and leaves the sides of the pan.
  • STEP 6.Transfer the mixture to a greased plate and spread it evenly.
  • STEP 7.Allow it to cool and cut into diamond-shaped pieces.
  • STEP 8.Heat oil in a pan and fry the dhokas until golden brown. Set aside.
  • STEP 9.In the same pan, add chopped onions and sauté until golden brown.
  • STEP 10.Add ginger-garlic paste and cook until fragrant.
  • STEP 11.Add tomato puree, turmeric powder, red chili powder, cumin powder, and salt. Cook until the oil separates.
  • STEP 12.Add water and bring the gravy to a boil.
  • STEP 13.Add the fried dhokas and simmer for 5-7 minutes.
  • STEP 14.Garnish with fresh coriander leaves and serve hot with rice or roti.

Cooking Tips

  • Make sure the dal paste is not too watery to achieve the right consistency of the dhokas.
  • You can add a pinch of baking soda to the dal paste for a softer texture.
  • For a richer gravy, you can add cashew paste or coconut milk.

  • Store any leftover dhokar dalna in an airtight container in the refrigerator for up to 2 days.
  • Reheat the curry on the stovetop or in the microwave before serving.
