Directions: Dhaba Style Veg Biryani Recipe

Cooking Directions

  • STEP 1.Start by soaking the basmati rice in water for 30 minutes. Meanwhile, heat oil in a large pan and add whole spices like cinnamon, cardamom, and cloves.
  • STEP 2.Add chopped onions and sauté until golden brown. Then, add ginger-garlic paste and cook until the raw smell disappears.
  • STEP 3.Next, add the mixed vegetables like carrots, peas, and beans. Cook for a few minutes until they are slightly tender. Add biryani masala, turmeric powder, and salt to taste.
  • STEP 4.In a separate pot, bring water to a boil and add soaked rice along with salt. Cook until the rice is 70% cooked. Drain the rice and keep aside.
  • STEP 5.Now, it's time to layer the biryani. In a large pot, spread a layer of cooked rice, followed by a layer of cooked vegetables. Repeat the layers until all the rice and vegetables are used.
  • STEP 6.Cover the pot with a tight-fitting lid and cook on low heat for 15-20 minutes. This will allow the flavors to meld together and the rice to fully cook.
  • STEP 7.Once done, gently fluff the biryani with a fork and serve hot. Garnish with fried onions, chopped coriander leaves, and mint leaves for added flavor.
  • STEP 8.Serve the dhaba style veg biryani with raita or yogurt on the side for a complete and satisfying meal.

Cooking Tips

  • Soak the rice for at least 30 minutes to ensure it cooks evenly and doesn't stick together.
  • Use a heavy-bottomed pot or a pressure cooker for cooking the biryani to prevent burning or uneven cooking.
  • You can add a few drops of rose water or kewra water while layering the biryani for a fragrant touch.
  • For a richer flavor, you can add a spoonful of ghee or clarified butter while cooking the biryani.

Storage and Serving

  • Leftover biryani can be stored in an airtight container in the refrigerator for up to 2 days.
  • To reheat, sprinkle some water over the biryani and heat it in a microwave or on the stovetop until heated through.
  • Serve the dhaba style veg biryani hot with raita or yogurt on the side for a complete and satisfying meal.
