  • As required Ingredients for Dhokla
  • 2 cup Kabuli chana
  • 2 No.s Onions sliced finely
  • 1 No.s Tomato chopped
  • 2 inch Ginger finely chopped
  • 4 No.s Garlic cloves, finely chopped
  • 2 No.s Bay leaf
  • 2 stick Cinnamon broken inch
  • 3 No.s Badi elaichi
  • 4 No.s Cloves
  • 2 tablespoon Ghee
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Garam masala powder
  • 1 teaspoon chana masala
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder

Directions: Dhaba Style Chana Masala For Jaisalmer Recipe

  • STEP 1.Wash and soak the kabuli chana for 8 eight hours or overnight.
  • STEP 2.Pressure cook with 1 tsp salt for 40 to 45 minutes. Check that the chana are soft and smash when pressed.
  • STEP 3.1 in a preheated pan add 2 tbsp ghees, 4 cloves of chopped garlic, 2 inches finely chopped ginger and 2 sliced or chopped onion.saute till onions are soft and begin to change color to lightly golden brown.
  • STEP 4.Add 2 inch cinnamon stick broken, 3 to 4 cloves, 2 badi elaichi, 2 torn bay leaf.
  • STEP 5.Saute on medium heat for a few seconds till the aroma of the whole spices are released.

  • STEP 6.4 then add the 2 chopped tomatoes, ½ tsp coriander powder,½ tsp garam masala powder, 1 tsp everest chana masala, ½ tsp turmeric powder, ½ tsp red chilli powder. Saute on medium high for 2 to 3 minutes till the tomatoes become soft and mushy.

  • STEP 7.5 next add the previously prepared kabuli chana.mix well with the masala and add salt to taste. Cover and simmer for 30 to 40 minutes. Then check for spices and salt and adjust accordingly. Turn off the heat.
