Ingredients for Dal Pakwan Recipe

  • As required For dal:
  • 1/2 cup Chana dal
  • 1.50 cups Water
  • 1/2 tsp aashirvaad Turmeric powder
  • 1/2 tsp aashirvaad seeds
  • 1/2 nos green chili (chopped)
  • 1/2 tsp Ginger-garlic paste
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • As required salt to taste
  • 1/2 tbsp ghee/oil
  • 1/2 tbsp Lemon juice
  • As required Chopped coriander
  • As required For pakwan:
  • 1/2 cup Maida
  • 1/2 tbsp semolina (sooji)
  • 1/4 tsp Aashirvaad Ajwain
  • 1/4 tsp Aashirvaad cumin seeds
  • 1/4 tsp black pepper powder
  • 1/2 tbsp Oil
  • As required salt to taste
  • As required Water
  • As required Oil For Frying
  • As required Mint chutney:
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves
  • 1 nos green chili
  • 1/2 piece -inchginger
  • 1/2 tbsp Lemon juice
  • As required ½ tsp roasted cumin powder
  • As required ½ tsp black salt
  • 1/2 tsp Chaat masala
  • 1/2 tbsp roasted channa dal
  • As required Imli Chutney:
  • 1/2 cup tamarind n Dates(soak in warm water)
  • As required ½ Cup Jaggery
  • As required ½ tsp red chili powder
  • As required ½ tsp roasted cumin powder
  • As required ½ tsp chaat masala

Directions: Dal Pakwan Recipe

  • STEP 1.Method:
  • STEP 2.Mix flour, semolina, cumin seeds, ajwain, oil, and salt. Knead into a stiff dough. Rest for 1/2 hr.
  • STEP 3.Roll out thin sheets, cut into small rectangles.
  • STEP 4.Prick with a fork to prevent puffing.
  • STEP 5.Deep fry till crisp.
  • STEP 6.Rinse and soak the chana dal for 1 hour.
  • STEP 7.Pressure cook with water, turmeric, and salt until soft but not mushy (2-3 whistles).
  • STEP 8.In a pan, heat ghee, add cumin seeds, green chilies, and ginger-garlic paste. Sauté for a minute.
  • STEP 9.Add the cooked dal, red chili powder, coriander powder, and mix well.
  • STEP 10.Simmer for 5 minutes and finish with lemon juice and chopped coriander.
  • STEP 11.Blend cooked chana dal into a smooth paste.
  • STEP 12.Heat ghee in pan  add the dal paste n mix till its thick.
  • STEP 13.Cool the mixture and add in pipping bag.
  • STEP 14.Wash and roughly chop the mint and coriander leaves.
  • STEP 15.Blend all ingredients together until smooth. Add water if necessary
  • STEP 16.Adjust salt and spice as per taste.
  • STEP 17.Make cone add filling
  • STEP 18.Grind to paste tamarind, dates n jaggery, strain.
  • STEP 19.Cook on medium heat until thick
  • STEP 20.Add red chili powder, cumin powder, chaat masala
  • STEP 21.Simmer for 8-10 minutes until the chutney thickens.
  • STEP 22.Cool completely
  • STEP 23.Make cone add filling.
  • STEP 24.Crispy Lentil Tuile:
  • STEP 25.Blend cooked dal with blanched palak cornflour, maida, pepper powder oil with a little water to make a smooth batter. Spread thinly on a tawa and bake till crisp.
  • STEP 26.Plating:
  • STEP 27.Splash mint chutney, place 1 rectangle Pakwan add channa dal from pipping bag leaving gap
  • STEP 28.In between gap add mint n imli chutney, place another pakwan, repeat same way, place final layer of pakwan add onion, tomato, instead of sev place crispy tuile pieces, coriander leaves.
  • STEP 29.Enjoy delicious innovative Dal Pakwan in Mille-Feuille style
