  • STEP 1.To make the dal, cook a mixture of lentils with spices and herbs until soft and creamy.
  • STEP 2.In a separate pan, temper mustard seeds, cumin seeds, and dried red chilies in ghee or oil.
  • STEP 3.Add the cooked lentils to the tempering and simmer for a few minutes until the flavors meld together.
  • STEP 4.To make the bafle, knead a dough using wheat flour, ghee, yogurt, and water. Let it rest for some time.
  • STEP 5.Divide the dough into small portions and shape them into balls. Flatten each ball slightly.
  • STEP 6.Deep-fry the bafle in hot oil until they turn golden brown and crispy on the outside.
  • STEP 7.Serve the dal and bafle together, garnished with fresh coriander leaves and a squeeze of lemon juice.

Cooking Tips

  • You can use a combination of lentils like split pigeon peas (toor dal) and split yellow lentils (moong dal) for the dal.
  • For extra flavor, you can add ginger-garlic paste and a pinch of asafoetida to the tempering.
  • Make sure the dough for the bafle is soft and pliable. If it's too dry, add a little more water or yogurt.
