Dahi vada is a famous chaat from the Indian subcontinent (specially in India, Pakistan) and popular throughout South Asia. Dahi vada is a extremely popular street food from North India. 'Dahi' means curd/yogurt and 'Vada' means deep fried lentil fritters. Fluffy and melt-in-mouth fritters are soaked in water and then dipped and coated with curd and topped with various,classic ,Indian chutneys. It is believed that in 18th century, the Mughal Khansamas prepared this delicacy in Mughal kitchen using curd,herbs and spices to improve digestion. Dahi vadais tangy and flavourful is which can be consumed as a chaat, snack or a side dish and best choice for Summer.

Ingredients for Dahi Vada / Dahi Bhalla Recipe

  • 3/4 cup chola dal (split & skinned black eyed beans)
  • 1/4 cup udad dal (split & skinned black gram)
  • 1/4 inch Pinch of asafoetida
  • to taste Salt
  • 125 g Oil for frying
  • 125 grams Curd
  • 1/4 cup Dates tamarind chutney
  • 1/4 tbsp Roasted cumin powder
  • 1/4 tbsp Black salt
  • 1/4 tbsp Red chilli powder
  • 0.06 cup Pomegranate seeds
  • 0.06 cup Finely chopped coriander

Directions: Dahi Vada / Dahi Bhalla Recipe

  • STEP 1.1. Wash and soak lentils in enough water for 4-6 hours. Then drain water and grind it without adding water. Add 2-4 tbsp if required.
  • STEP 2.2. Then add salt and asafoetida in batter and whip it till it becomes light and airy. It's colour will also changed. For testing, if batter is ready, drop some batter in water filled bowl, if it floats, it is ready to fry.
  • STEP 3.3. Heat oil and drop vadas with the help of spoon or hand and deep fry them from all the sides, on a medium flame.
  • STEP 4.4. Then transfer them to a water filled big and broad vessel.
  • STEP 5.5. Then squeeze each vada gently between your palms and arrange them in a plate. Pour some whisked curd over them and keep it in refrigerator for some time.
  • STEP 6.6. At the time of serving, arrange vada in a plate, pour some curd, dates-tamrind chutney. Sprinkle red chilli powder, black salt, roasted cumin powder. Lastly garnish with coriander and pomegranate.
  • STEP 7.7. Serve amd relish chilled dahi vadas.
  • STEP 8.Note:
  • STEP 9.1. Can add green chutney if you wish.
  • STEP 10.2. Adjust quantity of chutney and spices as per your taste.
